Sweet Chili Salmon

This week’s Fish Wednesday is going to be eaten out of a compartmentalized tray squeezed on the back of the seat in front of me, so I’ve moved it up a few days. Plus, who wants to put something as sacred as Fish Wednesday in the hands of British Airways? I might be able to get a nice smoked salmon sandwich in Heathrow, but by then it will be Thursday and the moment will have passed. I’ve moved it up to Monday, giving me the chance to use up the last bit of salmon.

It’s a simple meal. The salmon sat in sweet chili sauce for a while. The veggies are just tossed in olive oil and salt and pepper and then roasted in a very hot oven. When they were done, I put the veggies in a bowl and put the fish in the oven. Voila, not much to it. The salmon was still a little pink… delicious.

  1. I love salmon in sweet chilli sauce. This picture looks particularly good! When I tire of eating it with potatos, I like to toss it onto fried soba noodles for a more Asian flair.

  2. As I was lucky enough to eat the cooling version of this meal on Monday in Pam’s kitchen, I can say without any reservations that this was a fine way to have salmon.

    So fine, that when I complimented Pam on the sauce, she gave me her bottle of Mae Ploy Sweet Chili Sauce to take home to use for the few remaining days of summer we had left.

    I had also never roasted potatoes and green beans together, so last night with chicken, I had exactly the same mix of roasted vegetables, all the better as the potatoes were dug in the morning and the beans were picked minutes before going in the oven. I don’t know why I had never thought of this, but thanks to Pam, adding beans when I can to my potatoes is going to be standard fare in my kitchen.

    Yes, this was a fine fine meal and very worthy addition to Fish Wednesday, though it happened on Monday. Thanks for the invite!
