I used glass noodles, you could use just about anything &#8211; bean threads, rice noodles, whatever.<\/p>\n<p>First, steam the spinach with a lot of grated ginger and a little sesame oil. Don&#8217;t add any water to it, there&#8217;s enough on the leaves from washing it. Cook it just until it wilts, then take it out of the pan. Then, add a little curry paste &#8211; I use the Thai Kitchen Red Curry Paste. It&#8217;s HOT, so use it sparingly. Pour in some coconut milk, maybe a quarter cup, not much really. Then simmer the fish in the curry and coconut milk. The coconut milk boils down into a nice thick sauce. Drain the noodles, toss them in a little sesame oil and some soy sauce. Sprinkle the spinach with sesame seeds.<\/p>\n<p>I swear, it takes like, ten minutes. Okay, maybe fifteen. Anyway, it&#8217;s not a big deal. The biggest fuss is cleaning the damn spinach.That&#8217;s it.
